Since I cooked most of my meals at home, I also tend to experiment with things to make it less boring. I love watching videos and clips on how to cook certain things. And one of the videos I watch was how to make chee cheong fun using Vietnamese rice paper! Just so happens I have a lot of rice paper at home. I forgot why I have so many. I think I bought them to make these! And now I have a few recipe I have yet to tried using them! Anyway, these chee cheong fun is super easy to make, and taste super delicious! I only use prawns and spring onions as the filling. But the sauce makes the dish, mainly oyster sauce, soya sauce, sesame oil, and very important, chilli oil! I think this is also a low carb meal, but I am putting it here as part of my experimental meals for 2024.
There was also a phrase in 2024 where I was addicted to soba noodles. I think it was from watching a Korean food documentary about them, and that they were a lot more healthier and lower in carbs than the normal noodles. The above dish was inspired by that Korean food documentary from Netflix, I was trying to make North Korean cold noodles! It was mainly vegetarian, and my favourite ingredient for this dish was the air fried egg plant. As the soup is served iced cold, it is a super refreshing dish for a hot day.
Sometimes, the supermarket tries to clear their near-expiring cookie pre-packed boxes. It usually goes for half price, around 7rm a box. And since I always have butter in fridge for emergency purchase like this, one box of cookie mix and yield me 3 bottles of chocolate chips cookies! Not to mention my whole house smells like heaven whenever I make these. So far, I've been fortunate enough to come across the deal twice!
I also fell in love with these Oatbedient oat drinks. I got some sample free at a food expo in 2024, and love the malt oat taste of the drink. I saw that they have so many other flavours, so one day, I decided to just order every single flavour they have! I've tried them all, and I love only 3 of them: the original oat milk, the oat milk with oats and chia seed, and their chocolate oat milk. I have been cutting down on dairy milk every since my quarantine days during covid. I think it has a positive impact on my health too.
